CRANBERRY AND LIMONCELLO SEMIFREDDO

What we love about this recipe from redonline.co.uk is the you can make it the day before and simply pull it out the freezer when it’s ready to be served! A delicious dessert that is also time savvy is a big yes from us.
Ingredients:
- 300 gfresh cranberries
- 125 gcaster sugar
- 250 gtub mascarpone
- 300 mlMadagascan vanilla custard or other good quality custard
- Limoncello liqueur
- 4 tbsp.lemon curd
- Madeira loaf cake

LIMONCELLO CAKE WITH MASCARPONE FROSTING

Silly season is always jam-packed with dinner parties and when it’s your turn for desserts we just love this simple yet tasty Limoncello cake recipe that can be decorated however you like for a more personalised touch!
Ingredients:
For the cake:
- 2 ½ cups flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup butter (softened)
- 1 ½ cups sugar
- 3 eggs
- ½ cup buttermilk
- ½ cup Limoncello
- 1 lemon (zested and juiced)
- For the mascarpone frosting
- 200g of mascarpone cheese
- 1 ¼ cups lemon curd
- 2 cups chilled whipping (or heavy cream)
- 2/3 cups powdered sugar

LIMONCELLO TRIFLE

Ingredients:
- 1 cup (220g) caster sugar
- 100ml limoncello*
- 300g blueberries
- 1/2 teaspoon arrowroot
- 5 eggs, separated
- 250g mascarpone
- 1/3 cup (4 tablespoons) lemon curd
- 1/2 pandoro* or 1 Madeira cake, cut into 2cm-thick slices
- Whipped cream, to serve
- 1 tablespoon toasted flaked almonds, to serve

LIMONCELLO CHRISTMAS TREE

This Limoncello Christmas tower is everything we could ever dream of for a Christmas Day dessert! Served with a side of Ambra Limoncello of course… It would look so good on your beautifully decorated table that you almost won’t want to eat it!
Ingredients:
- 1 large Pandoro
- ½ cup of Limoncello
- 1 small jar of good quality store-bought lemon curd ( You won’t use it all)
- 2 cups heavy whipping cream
- 1 cup mascarpone cheese, room temp
- 2 heaping tablespoons, powdered sugar
- edible stars, white pearl sprinkles or anything else you want to decorate with
- A topper for your tree cake, I used a star ornament
